Do Keychains on Keyblades mean Master?

He meant that memories can be used to craft items and possibly other things within the KH universe. Xion's existence is a great example of the potential memories have.

Memories are an intangible substance, which can manifest themselves into a physical form via a vessel or some other non descript means.

well as far as I can tell real keyblades have keychains

though in the roxas and xion scans roxas didn't have on on his and xion did

though may be it's other way around but the name of oathkeeper or oblivion I think is the name of the keychain even though I could be wrong

I must have missed something then, because I've never seen Roxas without a keychain.
