I've only just started BBS, so I don't have a full opinion on it yet. However I'd have to kind of agree with Silh and scubasteve anyway.
I think it's true that nostalgia plays a lot into why people hold KH1 in such a high esteem. I don't have any such thing, so when I played it, it came across to me as a very rough and flawed game in terms of overall design: horrible camera, awkward platforming, etc. In fact a lot of the reason why people find it more difficult than KH2 has a lot to do with KH1's design flaws. It's really not that great a game at all.
...and yet it's still probably the best KH game. Why? "Charm"; in other words, the mix of Final Fantasy and Disney, two things a lot of people really like, mashed together with a not particularly excellent but serviceable Squeeaboo story, was so fresh at the time and ended up being a lot more than the sum of its parts. That's all KH in general has ever really had going for it, really.
However, the initial novelty of the idea has, by now, worn very thin. SE has opted to greatly develop the series' original story, which unfortunately is not that great due to poor execution, terrible dialogue, and just overall bland writing.
The Organization is probably one of the biggest reasons for this. I liked them a lot in CoM and thought they had a lot of potential to be cool villains, but KH2's execution ruined any chance of that.
