I believe the unversed are a sideproduct of vanitas' creation. When they created vanitas some darkness must have leaked and created the unversed, seeing as someone as vanitas has never been created again, there haven't been any other unversed around.

Maybe a different theorie has already been proven true. Don't hesitate and tell me! i'm dying to find out!!!
